It is one of our hottest sites, producing profound wines with plenty of stuffing. Because of their slaty minerality, they stand out above all for their unique finesse, which makes them keep their elegance despite their high ripeness. Soil: Red slate (paleozoic slate) Awards: 91/100 points Falstaff Weinguide 2020/21 Winemaking: Selective hand-picked, short masceration time (~4 hours) and gentle pressing. Very slow fermenation in stainless steel and old big wooden casks with about 20°C. Ageing on the yeast for nine month.
